Many times in Keynote, one can devise a workaround for a limitation if one thinks about the visual effect one wants to achieve, rather than focussing on the most obvious way to achieve it. In other words, concentrate on what the audience will see rather than how the slide is actually constructed. All of this is by way of suggesting that a workaround is to create two charts, one that just has the slice you want, and one with all the other slices. This way you can manipulate them independently quite easily.
